For us, winemaking should reveal the taste of the cepage. This is the golden rule on which all our vinification is based.
No wood! Champagne grapes are too fine and delicate to support a foreign taste. Our first fermentation is therefore carried out in neutral vats and more specifically, in temperature controlled, stainless steel vats. This enables us to control the speed of the fermentation and also to obtain a better second decanting.
The depth of our cellars provides a constant, low temperature of 9° C which ensures a very long second fermentation and the finesse of mousse for which our Champagne is renowned.
With just over 7 kilometres of deep chalky cellars at our disposal, we can store around 10 million bottles. At the present time we hold 7 million representing around 5 years' sales, which enables us easily to respect our minimum ageing rules which are:
3 years for the Brut Reserve
5 years for the Brut Vintage
8 years for the Sir Winston Churchill
After this lengthy resting period, our "remueurs" will do their job. Their only tools are their hands and we are the last "Grande Marque" house to continue this long tradition.
